Hi - Over the break my wonderful hubby has been rearranging my kitchen temporarily until we can afford the big expensive one in years to come !!!  In the meantime we have put in a fan & put more shelving up to allow more bench space.  It has always been my annoyance that I haven't had enough bench space for the big cooking projects I love to do from time to time - when I am in the mood !!

Now I feel inspired to cook some yummy things so here is my very own French Bruschetta Recipe with a Twist - try it - it is really yummy.  Even my faithful husband downed 4 x pieces & he doesn't like anything with tomato in it. 

Anyway for the summer of 2013 - Here it is.

1 x French Bread Stick
6 x Ripe Roma Tomatoes
1 x Large Capsicum
1 x Small Brown Onion
2 x big handfuls of Fresh Basil Leaves
1 x level tablespoon of Brown Sugar
1-2 tablespoons of Virgin Coldpressed Olive Oil
2-3 garlic cloves
Salt & Cracked Pepper to taste
First prepare the bread - slice the bread stick into easy to manage size bite slices & rub with garlic clove; place under grill to toast both sides.  Don't over toast - just to become crunchy & attractive to the eye!   Once toasted remove from oven & cool ready for serving.
Now cut open the Roma Tomatoes & remove the seeds - then dice into about 1cm squares.  Place in mixing bowl with chopped basil.  Place to one side.
Dice capsicum & onion & fry in dash of olive oil until slightly brown & add 1 x tablespoon of brown sugar & caramelize - add salt & cracked pepper to taste.  Put on a dinner plate & place in the freezer briefly to cool. 
Once the capsicum & onion mix is cooled down mix it with the tomato & basil mix & add 1 - 2 tablespoons of Olive Oil to give it a nice consistency & shine.   Don't overdo it!  Add more salt & pepper if needed but taste first - don't over salt!!!
Spoon spoonfuls of mixture onto bread pieces & serve with a glass of your favourite chilled drink.
